The food we are familiar with at our local Indian restaurant represents a fraction of India's culinary diversity. South and North India differ greatly in cooking methods, key ingredients and spices used.

This masterclass is ideal for Indian food lovers who want to develop their culinary skills further. We will kick off with preparation of a typical South Indian breakfast/brunch including dosa. You will then learn to prepare a typical South Indian thali comprising Malabar parantha (flat bread), two mains, one dal and rice.

Session 1: Masala dosa and accompaniments
Dosa: a traditional South Indian rice crepe
Coconut chutney
Masala Potato: spicy stir fried potato
Rasam: lentil broth with tomato and tamarind

Session 2: South Indian thali
Malabar Parotta: layered flatbread
Sambar: vegetables cooked in lentil broth
Two veg mains e.g:
kalan: green bananas cooked in coconut and yoghurt
avial: assorted slow cooked vegetables
One rice dish e.g.:
veg biryani

The final meal will be served with a glass of wine, Indian beer or alternative.
