Chef Tutor, Mariella Bliss, is founder/owner of ‘Blissful Italian Food’ in Oxfordshire. As well as delivering classes in her village she travels the country sharing her love and deep knowledge of Italian food.

In this class you will learn to prepare recipes from the vibrant South, the elegant North and of course the capital, Rome.

While northern Italians love their rich cream sauces, risotto, polenta and stuffed meats, people in the South embrace flavors such as tangy tomato sauces, olive oil and fresh seafood. Both north and south have contributed their share to classic Italian cuisine, but each region has its own distinct set of flavours. Mariella will guide you through the different ingredients of the North and show you how to prepare authentic Italian, family recipes. As Mariella is from Naples, you will also meet (and taste) the vibrant colours of the South.

  • Fresh pasta
  • Sicilian arancini
  • Aubergine parmigiana
  • Torta pasqualina – spinach and ricotta pie
  • Zucca in Saor – Veneitian sweet and sour butternut squash
  • Panacotta and biscotti

Some dishes will be prepared in pairs to allow participants to cover as many recipes as possible during the day.
