Tuscan cuisine like most Italian cuisine, is based on fresh and simple ingredients. In this class you will learn to prepare some Autumnal recipes celebrating seasonal vegetables, legumes and game. The session will start off with a glass of prosecco and Tuscan Antipasto consisting of cold-cuts, cheese and crostini. You will then learn to prepare a traditional meal which will be consumed at the end of the session with Tuscan wine.
Primo: Pappa al Pomodoro or Ribollito
Pappa al Pomodoro is a delightful, filling tomato and bread soup (although it feels like a stew). The garlic and basil makes it tastes so wonderfully fresh despite the use of stale (but good quality!) bread. Ribollito is is also hearty meal in itself as it also contains leftover bread, cannelini beans and lots and lots of veg.
Secondi: Ravioli di Zucca con Amaretti (for vegetarians) or Tuscan Pheasant or Boar & Polenta
Game, butternut squash and chestnuts are all in season at this time of year. Ravioli stuffed with squash and flavoured with butter, sage and amearetti is a taste sensation usually served as a Primo but equally as good as a main. Autumn is also game and mushroom season. A favourite is boar and polenta. Recipes for pheasant also include chestnuts.
Dolce: Torta Di Miele….Tuscan Apple Cake
Apples are in season in the UK and can be used to make a wonderful Tuscan apple cake. We will finish off the meal with Cantuccini and Vin Santo.
This class includes one glass of prosecco (125 ml), two glasses of wine (125 ml each) and one dessert wine (75 ml). If you don’t drink alcohol but would like to take part in the class, please contact us before booking to pay a reduced ticket price of £75.00 (meat eaters) or £65.00 (vegetarians).
