Chef Tutor Sachiko teaches at the best cooking schools in the UK and has also worked as the assistant to the head chef at Umu – a Michelin Star Japanese restaurant in Mayfair. She noticed the rise in interest for ‘Modern Japanese’ cuisine like Katsu curry and gyoza or dumplings and has developed this session plan based on this.
An article in the independent describes katsu curry as ‘wickedly wonderful’. You will learn how to prepare a katsu-kare (breaded, deepfried meat, poultry or vegetables) with Japanese panko breadcrumbs as well as the curry sauce to accompany this. The wiki entry suggests that the British introduced curry to Japan and it has since become a national dish. Sachiko will guide you through the preparation of the curry roux which will be served with the katsu, rice and traditional Japanese sides.
You will be welcomed with refreshments and the session will end with a meal of the food produced and glass of wine, Japanese beer or non-alcoholic alternative.
