This class is ideal for vegetarians and vegans who love entertaining and sharing food with friends and family and would like to develop their vegetarian/vegan cooking skills further.
The class will include:
-Learning knife skills and how to peel, chop and slice as precisely and fast as a chef.
-Understanding flavours and learning how to subtly balance or adjust them
-Discovering the singular umami flavour, its importance and how to achieve it in your dishes
-Learning technical cooking methods such as smoking, braising, poaching and emulsification
-Improving your presentation skills so you know how to plate a dish and create a harmony of colours, shapes and textures
-the menu is influenced by seasonal and locally grown produce availability.
Starter Deeply nourishing and moreish beetroot broth with mushroom pierogi
Main Smoked tomato risotto, slow cooked fennel and courgette, saffron aioli, samphire and radicchio
Dessert Elderflower infused peaches, spiced rhubarb with almond custard and crispy waffle
You will prepare a three course meal which will be eaten at the end of the session. We will serve vegan wine or suitable alternatives.
