Harborne Food School Welcome to Harborne Food School. We offer cookery classes, professional chef demonstrations and unique food experiences in our beautifully designed cookery school within the Grade II listed Clock Tower building on Harborne High Street, Birmingham. During this masterclass will cover all the skills you need to buy and cook fish to perfection including filleting, gutting,  cleaning, skinning, seasoning and scaling. The session starts with an introduction to sustainable fisheries over refreshments. This hands-on session starts with a demonstration and Charlotte provides expert guidance as you then practice skills and prepare fish dishes which will consumed as a final meal.

You will prepare a whole round fish, a whole flat fish and a whole oily fish then cook using different cookery methods like, steaming, pan frying and roasting. You will focus on temperature control and timings to prepare delicate fish optimally and experiment with different flavours reflecting international cuisines.

  • Practice in preparing and filleting flat (turbot) and round fish (sea bass and mackerel)
  • Pan fried fish with gremolata
  • Roasted Sea Bream with spring onions, fennel and spices
  • 30 minute Goan Fish Curry (cod fillets)
